Eyking Farms grows several varieties of leaf lettuce. Looseleaf (L. sativa var. crispa) has tender, delicate, and mildly flavoured leaves. Leaf lettuce has an open growth habit, which forms loose clusters of leaves rather than a tight head of lettuce. There are a number of varieties of leaf lettuce that include green and red leaf. Leaf lettuce is often very lightweight and ruffled, with a wrinkly surface and soft, almost velvety texture.

Nutritional Facts

Green leaf lettuce contains large amounts of vitamins A and K, plus the antioxidants beta carotene and lutein.

How to eat

Leaf lettuce is best eaten cold in salads, used for wraps and garnishes on sandwiches.
