Red Leaf Lettuce Salad

This recipe makes 4 servings

Ingredients

  • 2 tbsp (25 mL) wine vinegar
  • 2 tbsp (25 mL) orange juice
  • 2 tbsp (25 mL) extra-virgin olive oil
  • 2 tsp (10 mL) Dijon mustard
  • 2 tsp (10 mL) liquid honey
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 pinch pepper
  • 4 cups (1 L) torn red leaf lettuce
  • 1 celery stalk, thinly sliced
  • 1 carrot, thinly sliced
  • 1/4 cup (50 mL) thinly sliced sweet onions
  • 12 cherry tomatoes, halved

Directions

  • In large bowl, whisk together vinegar, orange juice, olive oil, mustard, honey, garlic, salt and pepper. Add lettuce, celery, carrot, onion and tomatoes. Toss to coat.
