Make filling up to 4 hours in advance and toss with dressing at the last minute.

Ingredients
- 2 hard-cooked eggs, chopped
- 1 cup (250 mL) chopped Romaine Lettuce
- 1 cup (250 mL) shredded Carrots
- 1/2 cup (125 mL) chopped Tomato
- 1/2 cup (125 mL) chopeed Sweet Yellow Pepper
- 3/4 cup (175 mL) shredded Cheddar Cheese
- 3/4 cup (175 mL) diced Cooked Ham or Chicken
- 4 10-inch (25 cm) whole wheat flour tortillas
- 4 leaves Romaine Lettuce
Directions
- In medium bowl, combine eggs, chopped lettuce, carrots, tomato, yellow pepper, cheese and ham.
- Dressing: In a small bowl, combine mayonnaise, mustard, vinegar, and salt and pepper to taste; toss with vegetable mixture.
- Place each tortilla on working surface. Line middle with lettuce leaf; top leaf with one-quarter of the vegetable mixture. Fold end over filling and roll side over filling.
