Pre-heat the oven to 200oC, 400oF. Melt the butter in a large frying pan and fry the onion for 3-4 minutes until softened. Add the herbs, spices celery and apple. Season to taste. Fry for a further 2-3 minutes. Stir in the breadcrumbs and cook for 1 minute before adding the stock. Mix well.
Transfer to an ovenproof serving dish or make into stuffing balls and bake for 20-25 minutes, or use to stuff the turkey.
