Spicy Cauliflower Curry

Enjoy this easy Indian vegetarian dish served over fragrant basmati rice and accompanied by crispy papa Dum or warm naan bread. Serves 2


  • 5-6 tbsp olive oil
  • 1 large onion, chopped
  • 1 small can stewed tomatoes
  • 1 small cauliflower, cut into pieces
  • 2 small potatoes, cubed
  • 2 tsp cumin seeds
  • 1 tbsp garam masala or curry powder
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tsp turmeric powder
  • 2 tsp chili powder
  • 1-2 cups of water
  • Salt to taste


  • In a large pot, heat olive oil over medium heat. Add the onion, cumin seeds, garlic powder and ginger powder. Cook the mixture for three minutes or until the onions are golden brown.
  • Add stewed tomatoes, turmeric powder and chili powder and cook for about 5 minutes. Add the cauliflower and potatoes and cook for another 7-8 minutes. Add 1-2 cups of water depending on desired consistency, lower heat and simmer for 6-10 minutes, stirring occasionally. Serve over rice or as a side dish.
